Spicy Bell Mix

My best dishes are the ones I never plan. I love going to the store finding vegetables that look pretty or good to me that day and try to make something new out of it. Which is exactly how I came up with this dish. I will worn you it is super spicy 🌶. So if you can't stand or don't like either take out the habanero pepper, jalapeno, or both. The habanero one is the hottest pepper. Don't sweet it is still super good.


I love cooking with colors and smells. Find the food and smell the spices without a recipe. I am a strong believer in following, listening to your Self. Before I found out about my tumor my subconscious was already changing the food I ate and I had no clue why I was craving specific things until now!

SO listen to you Self and if you don't know why you are making changes do a little research when you find a pattern


All my dish are very interchangeable so if you don't want to add one thing or when you go to the store and rather add other veggies, do it! Or if some of your veggies are about to go, use them! Zero waste!

Which is exactly what i did with the mushrooms in this recipe.


Ok, Let's start

I start by browning, cooking the red onion with cumin seeds. As I'm doing that I dice all the other veggies, the ones I have listed down below, putting them into a bowl until I am ready to use them.

Once I have everything properly diced and the onions are cooked pretty good I throw everything in.

I place two chicken breast, its okay if they are not prepped, this time I threw in two frozen ones and they turned out great. The trick is to keep it soaked and under the veggies.


I fill up the pan with chicken broth until I can start to see it coming to the top. I then add all the spices that I have listed down below and let it cook, stirring periodically.

This is a very simple recipe the hardest part is that it can take 45 to an hour to cook. But if you have an insta pot the same thing will work. Just make sure you put a lot of butter on the bottom.


Eat This Not That

If you don't want to eat potatoes I got you. Instead try these:

  • Celery Root

  • Parsnip

  • Turnips

  • Rutabaga

These are all great alternatives for this dish.


Ingredints

Cumin Seed

1tbs Tumeric

1 tbs Garlic Powder

1 tbs Salt

1tbs Kanye Pepper

1/2 tbs Pepper

1/2 tbs Ginger Powder

1/4c Stevia Monk

1/2 container Chicken Broth

1 Yellow Bell Pepper

1 Green Bell Pepper

1 Red Bell Pepper

1 Orange Bell Pepper

1 Habanero

1 Jalepeno

1 Russet Potato

1 Red Potato

1-2 Chicken Breast

2 Tomatoes

1 Red Onion

3 - 4 Mushrooms (optional)

Black Sesame Seeds (Optional)


Instructions

  1. Butter the pan and dice the onion finely then brown them in the pan with cumin seeds. Dice the rest of the vegetables except mushrooms, slice them finely and evenly.

  2. Place all vegetables in pan along with spices, and sugar. Place the chicken breast in the pan under the vegetables then pour the chicken broth into the pan.

  3. Cook, stir periodically until liquid is gone or until potatoes are soften.

  4. Best served with rice or quinoa.
